As a change from all the sweet fare up to now I thought I would share a very simple and easy supper. This is my son’s all-time favourite meal of the week and Monday nights are really not the same if this doesn’t feature on the menu – in his opinion anyway!
The easiest and tastiest dish imaginable which has been a family weekly favourite for at least a decade!
300 g macaroni
4 rashers bacon
1 can tomato and onion mix
dried herbs (basil, origanum, thyme) about 3 – 5 ml of each
garlic and herb seasoning (3 – 5 ml)
salt and pepper to taste
feta cheese, cubed (optional)
grated cheddar cheese (or a combination of cheddar and mozzarella)
Cook the bacon and cut it up.
Cook the macaroni in the usual way. (I cook it in the microwave on high in lots of boiling water for about 14 minutes, stirring after about 5 minutes to prevent it from sticking.)
Drain and place in an ovenproof dish and add the tomato and onion mix, herbs and seasonings.
Mix well together. Sprinkle the bacon and feta cheese on top.
Sprinkle the cheddar and/or mozzarella on top and bake at 180 C for approximately 20 minutes.
I sometimes add a little of whatever I have in leftovers, e.g. cooked sausages (bangers), chopped carrots, whole kernel corn, cooked broccoli, etc.
